For instance if you have opted to not have stairs in the pool and know you are going to be getting in and out of the pool using the leverage of the coping then you want a finish that is smooth so you don't damage your self on the edge. This coping style is called “bull nose”. It is a smooth edge and looks quite appealing.

The third choice is cantilevered which is a decorative-only. It tends to run completely flat and takes a sharp downturn at a 90 degree angle. Rough cut pool coping is made from rock and other natural materials and unnatural materials made to give a rustic look and feel to the pool side area. This is not for getting in and out of the pool--it is again--purl aesthetic.
